French Comfort Breakfast: Ham and Cheese Omelet with Buttered Toast and Melon
Ingredients
- 4 eggs
- 1 tbsp unsalted butter, plus more for toasting
- 1/4 cup milk
- 1/4 tsp fine salt
- 1/8 tsp black pepper
- 4 oz ham, thinly sliced
- 3/4 cup shredded Gruyère cheese
- 2 thick slices bread (about 3/4 inch thick)
- 2 tbsp unsalted butter (for buttered toast)
- 2 cups sliced melon (such as cantaloupe or honeydew)
Instructions
- In a medium bowl, whisk the eggs with the milk, salt, and pepper until smooth.
- Heat a nonstick skillet over low to medium-low heat. Add 1 tbsp butter and let it melt and foam slightly.
- Pour in the egg mixture. Stir gently with a silicone spatula, scraping the bottom and sides, until the eggs begin to look softly set, 3–5 minutes.
- Sprinkle the ham over one side of the eggs and add the Gruyère. Fold the eggs over and continue stirring just until the cheese melts and the omelet is creamy, about 1–2 minutes. Turn off the heat.
- Meanwhile, toast the bread until golden. Butter the toast with 2 tbsp butter while still warm.
- Serve the ham and cheese omelet alongside the buttered toast with the sliced melon on the side.
