Ingredients

  • 2 cups plain Greek yogurt
  • 1/4 cup honey
  • 2 cups mixed berries (fresh or thawed)
  • 1 cup granola
  • 4 large eggs
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp water (optional, to thin honey if needed)
  • 1 pinch salt

Instructions

  1. Add 4 large eggs to a saucepan and cover with water by about 1 inch. Add a pinch of salt.
  2. Bring to a boil over medium-high heat. Once boiling, reduce to a gentle boil and cook for 10 minutes.
  3. While the eggs cook, prepare an ice bath (a bowl of cold water with ice).
  4. Drain the eggs and immediately transfer to the ice bath for 5 minutes. Peel and set aside.
  5. In a bowl, stir Greek yogurt with lemon juice and lemon zest. If honey is very thick, stir it with 1 tbsp water until pourable.
  6. Assemble bowls: add yogurt to 4 servings, spoon berries over the top, drizzle with honey, and sprinkle granola on last to keep it crisp.
  7. Serve each bowl with 1 hard-boiled egg on the side.
