35 min 4 servings 716 cal

Ingredients

  • 8 oz deli roast beef (thinly sliced)
  • 4 hamburger buns
  • 1 tbsp unsalted butter
  • 1/2 cup beef broth
  • 1 tbsp prepared horseradish (optional)
  • 1 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 4 slices lettuce
  • 2 medium tomatoes, thinly sliced
  • 1/2 cup pickle slices
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 4 oz potato chips
  • 1 tbsp olive oil (for warming tomatoes, optional)

Instructions

  1. In a small skillet over medium heat, melt the butter. Add the deli roast beef, beef broth, garlic powder, salt, and black pepper. Warm for 3–5 minutes, stirring gently, until heated through.
  2. In a small bowl, stir together mayonnaise and Dijon mustard. If you like a kick, mix in the prepared horseradish.
  3. Toast the hamburger buns lightly if desired (in a toaster or dry skillet for about 1 minute per side). Spread the mayo-mustard mixture on the cut sides.
  4. Assemble sandwiches: layer warm roast beef, lettuce, and tomato slices on each bun. Add pickle slices on top or to the side.
  5. Serve each sandwich with a small handful of potato chips and extra pickle slices if you’d like.

Cooking tips

- Slice the roast beef thinly for faster warming and better melt-in texture. - Warm the buns briefly in a skillet or toaster before assembling to prevent sogginess. - For extra flavor, spread a light layer of horseradish sauce or mustard on the cut sides of the bread. - Assemble right before serving so lettuce and tomato stay crisp. - If using deli roast beef, warm it gently with a splash of beef broth to avoid drying out.
