Quick & Easy Roast Beef Sandwich with Lettuce, Tomato, Chips, and Pickle
Ingredients
- 8 oz deli roast beef (thinly sliced)
- 4 hamburger buns
- 1 tbsp unsalted butter
- 1/2 cup beef broth
- 1 tbsp prepared horseradish (optional)
- 1 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 4 slices lettuce
- 2 medium tomatoes, thinly sliced
- 1/2 cup pickle slices
- 1/2 tsp garlic powder
- Salt, to taste
- Black pepper, to taste
- 4 oz potato chips
- 1 tbsp olive oil (for warming tomatoes, optional)
Instructions
- In a small skillet over medium heat, melt the butter. Add the deli roast beef, beef broth, garlic powder, salt, and black pepper. Warm for 3–5 minutes, stirring gently, until heated through.
- In a small bowl, stir together mayonnaise and Dijon mustard. If you like a kick, mix in the prepared horseradish.
- Toast the hamburger buns lightly if desired (in a toaster or dry skillet for about 1 minute per side). Spread the mayo-mustard mixture on the cut sides.
- Assemble sandwiches: layer warm roast beef, lettuce, and tomato slices on each bun. Add pickle slices on top or to the side.
- Serve each sandwich with a small handful of potato chips and extra pickle slices if you’d like.
