Family Favorite Mexican Breakfast Burritos (Egg, Sausage, Cheese & Salsa)

Ingredients

  • 8 large eggs
  • 1 lb breakfast sausage (bulk or casings removed)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 small onion, diced
  • 1 small bell pepper, diced
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup salsa (plus more for serving)
  • 8 large flour tortillas (burrito size)

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add onion and bell pepper; cook 4–5 minutes until softened.
  2. Add breakfast sausage to the skillet. Cook, breaking it up, until browned and cooked through, 8–10 minutes. If there’s excess grease, spoon some off carefully.
  3. Stir in cumin, chili powder, salt, and black pepper. Cook 30 seconds to bloom the spices.
  4. In a bowl, whisk the eggs. Reduce heat to medium-low, add remaining 1 tbsp olive oil, and pour in eggs. Stir gently until softly scrambled, 3–5 minutes.
  5. Turn off heat. Stir in salsa and half the shredded cheese until melted slightly.
  6. Warm tortillas in a dry skillet for 15–30 seconds per side (or microwave stacked with a damp paper towel for 20–30 seconds).
  7. Spoon filling evenly among tortillas (about 1/2 cup to 3/4 cup each). Sprinkle with remaining cheese, then roll into tight burritos.
  8. Serve immediately with extra salsa on the side. Optional: toast burritos seam-side down in the skillet 1–2 minutes per side for a golden finish.
