Family Favorite Mexican Breakfast Burritos (Egg, Sausage, Cheese & Salsa)
Ingredients
- 8 large eggs
- 1 lb breakfast sausage (bulk or casings removed)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 small onion, diced
- 1 small bell pepper, diced
- 2 tbsp olive oil
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup salsa (plus more for serving)
- 8 large flour tortillas (burrito size)
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add onion and bell pepper; cook 4–5 minutes until softened.
- Add breakfast sausage to the skillet. Cook, breaking it up, until browned and cooked through, 8–10 minutes. If there’s excess grease, spoon some off carefully.
- Stir in cumin, chili powder, salt, and black pepper. Cook 30 seconds to bloom the spices.
- In a bowl, whisk the eggs. Reduce heat to medium-low, add remaining 1 tbsp olive oil, and pour in eggs. Stir gently until softly scrambled, 3–5 minutes.
- Turn off heat. Stir in salsa and half the shredded cheese until melted slightly.
- Warm tortillas in a dry skillet for 15–30 seconds per side (or microwave stacked with a damp paper towel for 20–30 seconds).
- Spoon filling evenly among tortillas (about 1/2 cup to 3/4 cup each). Sprinkle with remaining cheese, then roll into tight burritos.
- Serve immediately with extra salsa on the side. Optional: toast burritos seam-side down in the skillet 1–2 minutes per side for a golden finish.
Cooking tips
- Warm the tortillas briefly in a dry skillet or microwave before filling so they roll without cracking. - Cook sausage until well browned; then drain excess fat if the skillet gets greasy. - Scramble eggs gently over medium-low heat to keep them soft and tender. - Assemble burritos while the filling is hot, and serve with extra salsa on the side for control. - If reheating, wrap in foil and warm in a 350°F oven for 10–12 minutes to help cheese melt again.
